I Need a recipe using both sweet potato and white sweet potato, pecans and coconut.?
I Need a recipe using both sweet potato and white sweet potato, pecans and coconut. I think it’s a casserole, but can not find it. Can anyone help?
Firstly parboil the cubed sweet potato. Toss into a greased casserole dish. Melt some butter (qty depends on amount of sweet potato), then add about half cup treacle sugar. Pour this over the potato, add 2 to 3 cloves then sprinkle with cinnamon. Bake at 180/350 until sticky and done. Remove from oven, scatter pecans over and sprinkle with coconut. Serve hot and enjoy.

Maple Glazed Sweet Potatoes
Ingredients
* 2 1/2 sweet potatoes
* 3 tablespoons butter
* 1/4 cup maple syrup
* 2 tablespoons brown sugar
* 2 tablespoons flaked coconut (optional)
* 1/3 cup chopped pecans
Directions
1. Place sweet potatoes in a large saucepan with water to cover them. Bring the water to a boil, reduce heat, cover and let simmer 25 to 30 minutes until tender.
2. Preheat oven to 350 degrees F (175 degrees C). Use non-aerosol non stick spray to grease a 8×8 inch baking pan.
3. When the sweet potatoes are cool, peel and cut them into large chunks. Arrange them in the prepared dish.
4. In a small saucepan, melt butter, syrup, sugar and coconut together over a low heat. Cook for 3 to 5 minutes, stirring constantly. Sprinkle mixture over sweet potatoes. Top mixture with pecans.
5. Bake 5 to 7 minutes, until top is lightly browned.

It isn’t sweet potato and White sweet potato.
A lighter colored "sweet" potato is the real thig, the dark orange coored ones are actually yams.
Are you sure you don’t want a recipe for White Potatoes and Sweet Potatoes.

I am not aware of any recipe that spciffcally calls for both white and orange sweet potatoes. The dish you speak of, is it something you have had before, or a recipe you saw somewhere?

Mountain…Yes sweet potatoes can be white and not just light colored. The light colored one are the lighter colored variety of the orange sweet potato. There are also purple varities. In fact the flesh of a yam is white. It is not orange:
